Chicken and dumplings
Ingredients/Components
- flour - 2 c
- shortening - 1/2 c
- ice water - 1 item
- pepper to taste - 1 item
- salt to taste - 1 item
- whole chicken, deboned - 1 item
How to make chicken and dumplings:
Boil chicken 1 1/2 hours. Cut shortening into flour. Remove chicken from broth. Pour 1/3 cup broth into shortening and flour. Boil remaining broth. Add ice water to flour mixture until it makes a thick ball. Salt and pepper broth to taste. Roll dough out 1/8 inch. (Note: Harder the dough, better the dumpling.) Cut dumplings in strips and put in broth. Boil 8 minutes. Pick chicken off bone and put in broth. Do not stir chicken to bottom. Cook until chicken is warm.You may freeze dumplings on cookie sheet between wax paper days before.
