Chicken and dumplings
Ingredients/Components
- salt - 1 tsp
- stick margarine - 1/2 item
- plain flour - 1 item
- chicken broth - 1 c
- onion - 1/4 c
- celery - 1/4 c
How to make chicken and dumplings:
Season chicken and boil with celery and onion until tender. Remove from broth and cool. Remove meat from bone and save. Place broth in a large roaster and add enough water to equal 3 to 4 quarts liquid.Mix flour, enough to make a stiff dough, with one cup broth and 1 teaspoon salt. Knead and divide dough into 4 equal portions. On a lightly floured board, roll biscuits into dumplings, very thin; cut into 2-inch squares.
Bring chicken and broth to a full boil and drop in dumplings. Sprinkle with black pepper and add margarine. Do not stir. After all dumplings are in, boil a few minutes longer, until done. (If more liquid is needed, add a little water to the side before done.)
