Chicken and dressing



  • margarine - 1/2 c
  • chopped onion - 1/2 c
  • chopped celery - 1 c
  • chicken broth - 1 c
  • salt and pepper to taste - 1 item
  • cream of chicken soup - 1 c
  • cornbread crumbs - 4 c
  • whole chicken, boned and in serving size pieces - 1 item

How to make chicken and dressing:

Saute onion and celery in margarine; set aside. Heat soups (undiluted) and pour over cornbread crumbs. Add onion and celery; mix well. Season to taste (be careful with salt as soups are already salted). Pour 1/2 of dressing into a greased 3-quart casserole dish. Add chicken; top with remaining dressing. Bake at 350° for 50 to 60 minutes. Makes 6 servings.
