Ingredients/Components

  • salt - 1/4 tsp
  • vegetable oil - 2 Tbsp
  • chili powder
  • can chicken broth - 1 3/4
  • cloves garlic - 4 item
  • ground cumin - 1 tsp
  • black pepper - 1/2 tsp
  • large onion, chopped - 1 item
  • frozen corn
  • cayenne pepper - 1/4 tsp
  • can tomatoes - 1 1/2
  • can red kidney beans - 1 oz
  • prepared salsa - 1/4 c
  • whole green peppers, cooked and chopped - 2 item
  • boneless, skinless chicken breast, cut into 1/2-inch squares - 12 oz

How to make chicken and corn chili:

Heat oil in large heavy pot. Add garlic, green peppers and onion. Saute 5 minutes, stirring frequently. Add chili powder, cumin and cayenne pepper. Cook for 1 minute, stirring constantly. Add tomatoes; mash with spoon. Add broth. Bring mixture to a boil. Reduce heat to medium and simmer for 5 minutes or until chicken is tender. Stir in salt.
