Chicken and corn chili
Ingredients/Components
- salt - 1/4 tsp
- vegetable oil - 2 Tbsp
- chili powder
- can chicken broth - 1 3/4
- cloves garlic - 4 item
- ground cumin - 1 tsp
- black pepper - 1/2 tsp
- large onion, chopped - 1 item
- frozen corn
- cayenne pepper - 1/4 tsp
- can tomatoes - 1 1/2
- can red kidney beans - 1 oz
- prepared salsa - 1/4 c
- whole green peppers, cooked and chopped - 2 item
- boneless, skinless chicken breast, cut into 1/2-inch squares - 12 oz
How to make chicken and corn chili:
Heat oil in large heavy pot. Add garlic, green peppers and onion. Saute 5 minutes, stirring frequently. Add chili powder, cumin and cayenne pepper. Cook for 1 minute, stirring constantly. Add tomatoes; mash with spoon. Add broth. Bring mixture to a boil. Reduce heat to medium and simmer for 5 minutes or until chicken is tender. Stir in salt.Recipe categories: Main dish, Chili.
