Ingredients/Components

  • can cream of chicken soup - 1 item
  • crushed cornflakes
  • slivered almonds - 2 pkg
  • regular rice not Minute - 1 c
  • diced cooked celery - 2 c
  • cooked cubed chicken about 6 medium chicken breasts - 3 c
  • chopped cooked onions - 4 Tbsp
  • melted margarine for toasting almonds in skillet
  • melted margarine for cornflake crumbs - 2 3

How to make chicken almondine:

Topping:2 c. crushed cornflakes2 pkg. slivered almonds1 1/2 Tbsp. melted margarine (for toasting almonds in skillet)2 to 3 Tbsp. melted margarine for cornflake crumbs Mix cooked, cubed chicken, cooked rice, cooked celery and onions, Hellmann's mayonnaise, cream of chicken soup and salt and pepper to taste.

You may add more Hellmann's mayonnaise if mixture seems too dry. Pat or spread in shallow buttered dish and cover with topping listed.

Topping: Brown almonds in margarine. Heat in skillet over medium heat until lightly browned. Add almonds to 2 cups crushed cornflakes, mixed with 3 tablespoons melted margarine. Sprinkle topping over chicken mixture and bake at 375° for 30 to 40 minutes. Cover with foil for 3/4 baking time, then cover.
