Chicken almond casserole



  • milk - 4 c
  • flour - 1/2 c
  • butter - 2 Tbsp
  • grated cheese - 1/4 c
  • minced onion - 3 Tbsp
  • sliced mushrooms - 1/2 lb
  • cooked chicken, diced - 3 c
  • buttered crumbs - 3/4 c
  • salad type olives - 1/2 c
  • shredded almonds, toasted - 3/4 c

How to make chicken almond casserole:

Cook onion and mushrooms in butter until onion is yellow; set aside. Melt 1/2 cup butter, stir in flour and add milk. Cook and stir until sauce boils. Add salt and pepper.

Place layer of diced chicken in 3-quart casserole. Sprinkle with half almonds, mushrooms and onions. Mix and cover with 1/2 the sauce. Repeat layers. Mix cheese and buttered crumbs. Sprinkle over top and bake, uncovered, in 375° oven for 30 to 40 minutes.
