Chicken a la chardon
Ingredients/Components
- eggs - 2 item
- butter or oleo - 1/2 lb
- garlic powder - 3 tsp
- Parmesan cheese - 1/2 c
- salt and pepper to taste - 1 item
- mushrooms, sliced - 1/2 lb
- Italian seasoned bread crumbs - 1 c
- juice of 1/2 lemon
- finely chopped parsley - 1 tsp
- chicken breasts, boned and split - 3 item
How to make chicken a la chardon:
Beat eggs with salt and pepper to taste and 2 teaspoons garlic powder; set aside. Combine bread crumbs, 1/2 teaspoon garlic powder and Parmesan cheese. Dip each chicken piece in egg mixture, then roll in crumb mixture. Arrange chicken pieces in a single layer in a 9 x 13-inch baking pan.Melt butter; stir in remaining 1/2 teaspoon garlic, parsley and lemon juice. Pour half of butter sauce over chicken. Bake at 375° for 25 to 30 minutes. Remove from oven; sprinkle with sliced mushrooms. Pour remaining butter sauce over. Return to oven; bake an additional 5 to 10 minutes, uncovered. Yields 6 servings.
