  • eggs - 2 item
  • butter or oleo - 1/2 lb
  • garlic powder - 3 tsp
  • Parmesan cheese - 1/2 c
  • salt and pepper to taste - 1 item
  • mushrooms, sliced - 1/2 lb
  • Italian seasoned bread crumbs - 1 c
  • juice of 1/2 lemon
  • finely chopped parsley - 1 tsp
  • chicken breasts, boned and split - 3 item

How to make chicken a la chardon:

Beat eggs with salt and pepper to taste and 2 teaspoons garlic powder; set aside. Combine bread crumbs, 1/2 teaspoon garlic powder and Parmesan cheese. Dip each chicken piece in egg mixture, then roll in crumb mixture. Arrange chicken pieces in a single layer in a 9 x 13-inch baking pan.

Melt butter; stir in remaining 1/2 teaspoon garlic, parsley and lemon juice. Pour half of butter sauce over chicken. Bake at 375° for 25 to 30 minutes. Remove from oven; sprinkle with sliced mushrooms. Pour remaining butter sauce over. Return to oven; bake an additional 5 to 10 minutes, uncovered. Yields 6 servings.
