Cheesy scalloped potatoes

- milk - 3 c
- salt - 1 item
- flour - 1/2 c
- margarine - 1/2 c
- pepper - 1 item
- diced onion - 1/2 c
- to 10 large potatoes, peeled, sliced thin - 8 item
- finely shredded mild Cheddar cheese - 2 c
How to make cheesy scalloped potatoes:
Place potatoes in crock-pot (only fill 2/3 full). In saucepan, melt butter; add onion. Steam until clear, then add flour stirring constantly on medium heat. Add milk and simmer until sauce begins to thicken; remove from heat. Add 1 1/2 cups of cheese. Cook on low 14 to 16 hours. Best when done the night before. Place remainder of cheese on top.
