Ingredients/Components

  • medium potatoes - 6 item
  • shredded sharp Cheddar cheese - 2 c
  • margarine - 6 Tbsp
  • sour cream - 1 c
  • to 3 green onions, chopped - 2 item
  • salt - 1/2 tsp
  • pepper - 1/2 tsp
  • paprika - 1 item

How to make cheesy potatoes:

Cook potatoes in jackets. Cool and peel. Shred potatoes. Heat cheese and 4 tablespoons margarine until cheese is almost melted. Remove from heat and add sour cream, onions, salt and pepper; blend well. Fold in potatoes and spoon into a 2-quart buttered casserole. Dot with remaining 2 tablespoons margarine and sprinkle with paprika. Bake for 30 minutes at 325°.
