Cheesy potato soup
Ingredients/Components
- diced potatoes - 2 c
- diced celery - 1/2 c
- diced carrots - 1/2 c
- diced onion - 1/4 c
- water - 1 c
- bouillon cube - 1 ck
- parsley - 1 tsp
- Velveeta cheese, cubed - 1/2 lb
- hard-boiled eggs, chopped - 3 item
- milk
- salt and pepper to taste - 1 item
How to make cheesy potato soup:
In a large pot, combine potatoes, celery, carrots, onion, water, parsley and bouillon cube. Cook over medium heat until soft (about 20 minutes). Add cheese; stir until melted. Reduce heat and add milk and eggs. Add salt and pepper to taste.Variation: Sprinkle top with crumbled bacon.
