Cheesy potato skins



  • sour cream - 1 item
  • onion, chopped - 1 Tbsp
  • Velveeta cheese, cubed - 1/4 lb
  • large baking potatoes - 4 item
  • chopped red and green peppers - 2 Tbsp
  • crispy cooked bacon pieces, crumbled - 2 item

How to make cheesy potato skins:

Cut potatoes in half lengthwise; scoop out center, leaving 1/4-inch shell. Deep-fry shells in 375° oil for 2 to 3 minutes or until golden brown; drain. Place on cookie sheet. Top with cheese; broil until cheese melts. Top with remaining ingredients.
