Cheesy pasta primavera
Ingredients/Components
- pkg - 1 oz
- milk - 1/4 c
- butter - 1 Tbsp
- grated Parmesan cheese - 2 Tbsp
- cottage cheese - 1 c
- shredded Mozzarella cheese - 1/2 c
- ground black pepper - 1/4 tsp
- cherry tomatoes, halved - 2 c
- diced sweet red or green bell pepper - 2 c
- sliced yellow summer squash or zucchini - 2 c
How to make cheesy pasta primavera:
Cook spaghetti according to package directions in unsalted water. Meanwhile, in a large skillet, heat butter. Add bell pepper; cook and stir occasionally until barely tender. Add squash and mushrooms. Cook and stir occasionally, until barely tender, about 4 minutes. Drain pasta; toss with vegetables in skillet. Cover and keep warm.In a saucepan, combine cheeses, milk and black pepper. Cook over medium-low heat. Cook and stir cheese mixture just until hot, about 1 minute (do not boil). Add reserved pasta and vegetables, including cherry tomatoes. Toss to coat. Serves 4.
