Ingredients/Components

  • shredded Cheddar cheese, divided
  • boneless, skinless chicken breasts, cut into small pieces - 1 lb
  • jar thick/chunky salsa, divided - 1 item
  • soft tortilla shells 8-inch - 10 item
  • frozen corn, cooked

How to make cheesy chicken enchiladas:

Heat large nonstick skillet sprayed with cooking oil on medium heat. Add chicken; cook and stirring about 6 minutes or until cooked through. Add 1/2 cup of the salsa and 2/3 cup of cheese; mix lightly. Spread 1 cup of remaining salsa onto bottom of a 13 x 9-inch baking dish. Spoon 1/4 cup of chicken mixture down the center of each tortilla shell and roll up. Place tortilla seam down in prepared dish. Top with remaining salsa and cheese. Bake at 350° for 20 minutes. Serve with corn.
