Cheesy chicken chowder
Ingredients/Components
- milk - 2 c
- butter - 1/4 c
- all-purpose flour - 1/3 c
- pepper - 1/4 tsp
- diced onion - 1/2 c
- chicken broth - 3 c
- shredded Cheddar cheese - 2 c
- salt to taste - 1 item
- diced celery - 1 c
- diced, cooked chicken - 2 c
- diced carrots - 1 c
- diced, peeled potatoes - 2 c
How to make cheesy chicken chowder:
In a 4-quart saucepan, bring broth to a boil. Reduce heat and add potatoes, carrots, celery, onion, salt and pepper. Cover and simmer for 15 minutes or until vegetables are tender.Meanwhile, melt butter in a medium saucepan. Add flour and mix well. Gradually stir in milk. Cook over low heat until slightly thickened. Stir in cheese and cook until melted. Add to broth along with chicken. Cook and stir over low heat until heated through.
