Ingredients/Components

  • hamburger - 1/2 lb
  • onion, chopped - 1/2 c
  • can plum tomatoes - 28 oz
  • oregano - 2 tsp
  • salt
  • brown sugar - 1 tsp
  • eggs, beaten - 2 item
  • Parmesan cheese
  • Mozzarella cheese, sliced - 8 oz
  • salad oil - 2 Tbsp
  • clove garlic, minced - 1 item
  • can tomato paste - 6 oz
  • basil - 1 tsp
  • pepper - 1/4 tsp
  • eggplant, sliced - 1 lb
  • seasoned bread crumbs - 1/2 c
  • oil - 1/3 c

How to make cheesy beef casserole:

Select extra lean ground beef. Heat oil in a large skillet. Saute onion and garlic for 2 minutes. Add beef. Saute until pinkness is gone.

Add tomatoes, tomato paste, herbs, salt, pepper and sugar. Heat to boiling. Lower heat. Simmer 45 minutes.

Dip eggplant into beaten eggs, then into bread crumbs, mixed with 1/2 cup of the Parmesan. In another skillet, heat 1 tablespoon oil, quickly browning eggplant on both sides, using more oil as needed.

Place eggplant into lightly greased 13 x 9-inch pan. After 1/2 the slices are layered, top with 1/2 cup Parmesan, all the Mozzarella, and half the tomato sauce. Layer with the rest of the eggplant, leftover egg and tomato sauce. Sprinkle with the rest of the Parmesan and leftover crumbs.

Bake at 350° uncovered for 25 minutes until cheese melts and dish is bubbly and hot. Serves 4 to 6 generously.
