Ingredients/Components
- sugar - 1/4 c
- vanilla - 1/4 tsp
- pkg
- salt - 1/4 tsp
- flour - 3 Tbsp
- cornstarch - 2 Tbsp
- heavy cream - 1/4 c
- large eggs - 6 item
- margarine - 1/3 c
- grated lemon peel - 3/4 Tbsp
- liquid
- graham crackers - 11 item
- Glaze:1 can sour cherries
How to make cheesecake:
Filling:5 (8 oz.) pkg. cream cheese3/4 Tbsp. grated lemon peel1/4 tsp. vanilla1 3/4 c. sugar3 Tbsp. flour1/4 tsp. salt6 large eggs1/4 c. heavy cream Glaze:1 can sour cherries1/2 c. sugar2 Tbsp. cornstarch water, mixed with cherry juice to make 1 c. liquid Crust: Crush graham crackers. Mix all ingredients. Press into bottom of a spring-form pan. Bake at 375° for 8 minutes.Filling: Beat softened cream cheese 5 minutes. Gradually add lemon peel, vanilla, sugar, flour and salt. Add eggs, one at a time, and beat thoroughly. Stir in heavy cream and pour into crust. Bake until center tests solid in a 450° oven for 12 minutes and lower temperature to 300° for approximately 90 minutes more.
Glaze: Mix all ingredients together. Cook over high heat, stirring constantly. Add red food coloring, one drop at a time, until desired color is reached and glaze is thick.
Cut brown crust off top of cheesecake when cool. When cool, spread cherry glaze on top only.
