Cheese-stuffed zucchini
Ingredients/Components
- salt - 1/2 tsp
- beaten eggs - 2 item
- pepper - 1/8 tsp
- chopped onion - 2 Tbsp
- cracker crumbs - 1/2 c
- chopped parsley - 2 Tbsp
- small curd cottage cheese - 1/2 c
- melted oleo - 2 Tbsp
- sharp Cheddar cheese
- zucchini 6 to 7-inch - 6 item
How to make cheese-stuffed zucchini:
Cut off ends of squash. Boil whole for approximately 12 minutes until barely tender. Remove from water. Slice lengthwise. Scoop out pulp and invert on paper towel to drain. Combine all other ingredients, except crackers and butter. Stuff zucchini shells.Toss butter and crackers. Put on top. Place on greased cookie sheet and bake 25 minutes at 350°.
