Ingredients/Components

  • salt - 1 tsp
  • flour - 3 Tbsp
  • butter - 4 Tbsp
  • egg yolks - 6 item
  • egg whites - 8 item
  • cream of tartar - 1/4 tsp
  • dry mustard - 1/4 tsp
  • ground nutmeg - 1/4 tsp
  • cayenne - 1/4 tsp
  • half and half cream
  • grated sharp Cheddar cheese - 2 c

How to make cheese souffle:

Over low heat melt butter and add flour, stirring with wooden spoon until blended. Slowly add cream, stirring constantly. Heat until thick, do not let mixture boil. Add salt, cayenne, mustard, nutmeg, 1 1/2 cups cheese and blend. Beat egg yolks two at a time; add to mixture, blending after each addition. Place in large bowl. Add cream of tartar to egg whites before beating, beat until stiff.

Butter a 2 quart souffle dish. Sprinkle lightly with cheese (grated). Fold egg whites into cheese mixture and turn into souffle dish. Sprinkle top with remaining cheese. Set dish in a pan of hot water (not boiling) and place in a cold oven. Set oven at 325° and bake for 40 or 50 minutes. Top should be a delicate brown crust.
