Cheese 'n chicken enchiladas



  • pkg - 1 oz
  • margarine - 2 Tbsp
  • 8 oz - 2 c
  • ground cumin - 1 tsp
  • medium onion, chopped - 1 item
  • flour tortillas 6-inch - 8 item
  • jar picante sauce, divided - 1 oz
  • chicken or turkey, cooked and shredded

How to make cheese 'n chicken enchiladas:

Heat oven to 350°. Cook and stir onion and margarine in large skillet until tender. Stir in chicken, 1/4 cup picante, cream cheese and cumin; cook until thoroughly heated. Stir in 1 cup cheese. Spoon about 1/3 cup chicken mixture into center of each tortilla; roll up. Place seam side down in 12 x 7-inch baking dish. Top with remaining picante sauce and cheese. Bake for 15 minutes. Serves 4 to 6. Preparation time: 10 minutes.
