Ingredients/Components

  • sugar - 3 Tbsp
  • cream cheese - 19 oz
  • vanilla extract - 1 tsp
  • sour cream - 1 pt
  • salt - 1/2 tsp
  • eggs, separated - 6 item
  • butter or margarine, softened - 1/4 c
  • cream of tartar - 1 tsp
  • flour or cornstarch - 3 Tbsp
  • graham cracker crumbs fine - 1 c

How to make cheese cake:

Have all ingredients at room temperature. Butter 9-inch spring-form pan. Mix butter and crumbs well. Reserve 1/4 cup and press the remainder firmly on the bottom of the pan. Add cream of tartar to egg whites and beat until foamy. Gradually add 3 tablespoons sugar and beat until stiff. Set aside.

Beat cream cheese. Mix in 1 1/2 cups sugar, flour and salt. Gradually beat into cheese. Add egg yolks, one at a time, beating thoroughly after each one. Add sour cream and vanilla. Mix well. Fold in egg whites thoroughly and pour into prepared pan. Sprinkle with reserved crumbs. Bake in a preheated oven at 325° for 1 1/4 hours or until firm.

Turn off heat, open oven door and leave for 10 minutes. Remove from oven and let stand on cake rack away from drafts until cool. Chill. Cake will shrink as it cools. Snap off sides of pan. Can use berries for topping.
