  • graham cracker crumbs

  • cream cheese
  • sour cream - 1 c
  • salt - 1 tsp
  • eggs, separated - 5 item
  • sifted flour - 1/4 c
  • lemon juice
  • butter, melted - 1/4 c
  • almond flavoring - 1/2 tsp
  • chopped almonds - 1/4 c
  • real vanilla - 1 tsp
  • nutmeg or mace - 1/4 tsp

How to make cheese cake:

Graham Cracker Pie Crust:1 1/2 c. graham cracker crumbs1/4 c. sugar1/4 c. chopped almonds1/4 c. butter, melted1/4 tsp. salt Crust: Combine all ingredients and press mixture evenly on bottom and sides of greased 10 1/2-inch spring-form pan. Chill.

Preheat oven to 325°. Combine cream cheese, 1 cup sugar and salt. Mix well. Add the flour and egg yolks and beat thoroughly. Mix in the lemon juice, nutmeg, vanilla, almond flavoring and sour cream. Beat egg whites with remaining sugar until stiff, but not dry. Fold into cheese mixture. Pour mixture into chilled pie crust and bake for 1 hour and 15 minutes. Cool in oven for 1 hour; finish cooling on rack, then refrigerate until well chilled before removing outer rim of pan. Serve plain or top with preserved fruit.
