Cheese blintzes
Ingredients/Components
- sugar - 2 Tbsp
- cream cheese
- milk
- salt - 1/2 tsp
- flour - 1 c
- eggs, beaten - 4 item
- stick butter - 1/4 item
- pinch of cinnamon - 1 item
- whipped or creamed cottage cheese - 8 oz
- 10x confectioners sugar to taste
How to make cheese blintzes:
Filling:1/2 lb. cream cheese8 oz. whipped or creamed cottage cheese 10x confectioners sugar to taste Mix together beaten eggs, sugar, flour, salt and cinnamon. Mix in milk, a little at a time, until mixture is smooth. Refrigerate for at least 2 hours, then melt butter and add to cold mixture.Lightly grease a 6 or 7-inch frying pan (or use Pam). Put enough batter to cover bottom of pan and roll around quickly until you have a smooth pancake. Fry on one side only, then turn over onto a plate.
Mix together filling ingredients. Put a small amount of filling into center of pancake and roll up. Repeat with rest of batter. Freeze, if desired. When ready to cook, fry frozen blintzes in a buttered pan on both sides. Serve with sour cream. Makes about 24.
