Ingredients/Components

  • milk - 2 c
  • butter or margarine - 3 Tbsp
  • chicken broth - 1 c
  • salt and pepper to taste - 1 item
  • grated Cheddar cheese - 1 c
  • chopped parsley - 3 Tbsp
  • medium onion, finely chopped - 1 item
  • drops Tabasco sauce - 5 item
  • clove garlic, finely chopped - 1 item
  • mashed potatoes instant potatoes may be used

How to make cheddar cheese soup:

In a microwave-safe dish, place the onion, garlic and butter. Microwave at High for 1 minute. Add the mashed potatoes, broth and milk. Mix well. Cook again at High for 5 minutes, stirring at least twice. Make sure mixture is smooth. Add Cheddar cheese and Tabasco. Stir. Add salt and pepper. Return soup to oven. Microwave at High just until soup is very hot, about 2 minutes. Stir until smooth. Sprinkle with parsley. Serve. Makes 4 servings.
