Cauliflower supreme



  • pkg - 1 oz
  • milk - 1 c
  • salt - 1/4 tsp
  • margarine or butter - 2 Tbsp
  • all-purpose flour - 2 Tbsp
  • pepper - 1/8 tsp
  • grated Parmesan cheese - 2 Tbsp
  • chopped onion - 1/4 c
  • fine dry bread crumbs - 2 Tbsp
  • sliced celery - 1 c
  • margarine or butter, melted - 1 Tbsp
  • cauliflower flowerets - 2 c
  • chopped red or green pepper - 1/2 c

How to make cauliflower supreme:

In a medium saucepan, cook cauliflower, celery, onion and red or green pepper, covered, in a small amount of lightly salted water 5 to 7 minutes or until crisp-tender. Drain.

Meanwhile, in a medium saucepan, melt 2 tablespoons margarine. Stir in flour, salt and pepper. Add milk all at once. Cook and stir until thick and bubbly. Cook and stir 1 minute more. Add cream cheese to sauce; stir until cheese is melted. Stir in drained vegetable mixture. Heat through.

In a small bowl, combine crumbs, Parmesan cheese and melted butter. Transfer vegetable mixture to a serving bowl. Top with crumb mixture. Makes 6 servings.
