Cauliflower soup
Ingredients/Components
- milk - 3 c
- sour cream - 1 c
- flour - 3/4 c
- oil - 2 Tbsp
- oleo - 3/4 c
- chopped onion - 1/2 c
- chopped celery - 1 c
- chicken broth - 8 c
- parsley - 2 Tbsp
- carrot, grated - 1 item
- head cauliflower - 1 item
How to make cauliflower soup:
Heat oil in large pot. Add chopped onion, celery and carrot. Cook 2 minutes. Add cauliflower; cover. Cook 15 minutes. Add broth and bring to boil 5 minutes.In saucepan, add flour and melted butter and bring to simmer. Add 2 cups milk until smooth. Add 1 cup milk; stir well. Cook 20 minutes. Add to vegetable and broth mixture. Add sour cream before serving. Stir well. Can be frozen.
