Ingredients/Components

  • milk - 3 c
  • salt - 3/4 tsp
  • flour - 3 Tbsp
  • butter - 4 Tbsp
  • water - 3 c
  • parsley - 2 Tbsp
  • chicken bouillon cubes - 3 item
  • medium head cauliflower - 1 item
  • mace - 1/4 tsp
  • medium onions, peeled and grated - 2 item
  • ribs celery, cut in 3-inch pieces - 4 item

How to make cauliflower soup:

Wash cauliflower; break into small pieces and place in large saucepan. Add onions, celery and water. Simmer 20 minutes or until vegetables are tender. Remove vegetables from cooking water with slotted spoon. Save cooking water. Place vegetables and butter in food processor and process until smooth. In large saucepan, melt butter and stir in flour and seasoning. Cook 1 minute.

Blend in remaining cooking water and milk. Add bouillon cubes. Stir constantly until mix thickens and boils. Add vegetables and heat through. Sprinkle with parsley and serve. Serves 6 to 8.
