Ingredients/Components

  • butter or margarine - 6 Tbsp
  • salt - 1/4 tsp
  • all-purpose flour - 2 Tbsp
  • whipping cream
  • chopped fresh parsley - 2 3
  • pepper to taste - 1 item
  • pinch of cayenne pepper - 1 item
  • to 2 garlic cloves, minced - 1 item
  • head cauliflower, broken into florets - 1 item
  • cooked ham, chopped - 4 oz
  • 4 to 6 oz

How to make cauliflower au gratin:

Melt butter in a large skillet. Saut?© garlic and ham for 2 minutes. Add cauliflower and cook just until crisp-tender. Combine flour and cream; stir into skillet and blend well. Add salt, pepper and cayenne pepper. Cook and stir until thickened and bubbly; cook and stir 1 minute more. Pour into a 2-quart baking dish. Sprinkle with cheese. Place under a preheated broiler until lightly browned, about 2 to 4 minutes. Sprinkle with parsley. Serve immediately. Yield: 6 to 8 servings.
