Catfish gumbo
Ingredients/Components
- pkg - 1 oz
- vegetable oil - 2 Tbsp
- chopped onion - 1/2 c
- chopped celery - 1/2 c
- chicken broth - 2 c
- chopped green pepper - 1/2 c
- salt and pepper to taste - 1 item
- crushed red pepper - 1/4 tsp
- catfish fillets - 1 lb
- medium garlic cloves, finely chopped - 2 item
- gumbo file - 1 tsp
- can whole tomatoes undrained - 1 1/2
- hot rice
How to make catfish gumbo:
Cut catfish into 1-inch pieces. Cook celery, green pepper, onion and garlic in vegetable oil in Dutch oven until tender. Add broth, tomatoes, okra, crushed red pepper, gumbo file, salt and pepper. Cover; simmer for 20 minutes. Place fish on vegetables. Cover; simmer 15 minutes longer, or until fish flakes easily when tested. Serve with hot cooked rice.
