Ingredients/Components

  • salt - 1 Tbsp
  • vegetable oil - 1/4 c
  • cloves garlic, minced - 2 item
  • bay leaf - 1 item
  • oregano - 1/2 tsp
  • hot cooked rice - 1 item
  • celery, chopped - 1 c
  • okra - 10 oz
  • thyme - 1/2 tsp
  • red pepper - 1/2 tsp
  • cans beef broth - 2 oz
  • catfish fillets - 2 lb
  • sweet pepper, chopped - 1 c
  • can tomatoes, chopped - 1 oz
  • onion or green onion, chopped - 1 c

How to make catfish gumbo:

Saute first four ingredients in hot oil until tender, using a Dutch oven or large pot. Stir in broth and next six ingredients. Bring to a boil. Cover, reduce heat and simmer 30 minutes, stirring occasionally. Cut fish into 1-inch pieces and add to gumbo. Simmer 10 minutes. Stir in okra and cook an additional 5 minutes. Remove bay leaf. Serve over rice. Other fish may be used. Makes 3 1/2 quarts.
