Catfish gumbo
Ingredients/Components
- salt - 1 Tbsp
- vegetable oil - 1/4 c
- cloves garlic, minced - 2 item
- bay leaf - 1 item
- oregano - 1/2 tsp
- hot cooked rice - 1 item
- celery, chopped - 1 c
- okra - 10 oz
- thyme - 1/2 tsp
- red pepper - 1/2 tsp
- cans beef broth - 2 oz
- catfish fillets - 2 lb
- sweet pepper, chopped - 1 c
- can tomatoes, chopped - 1 oz
- onion or green onion, chopped - 1 c
How to make catfish gumbo:
Saute first four ingredients in hot oil until tender, using a Dutch oven or large pot. Stir in broth and next six ingredients. Bring to a boil. Cover, reduce heat and simmer 30 minutes, stirring occasionally. Cut fish into 1-inch pieces and add to gumbo. Simmer 10 minutes. Stir in okra and cook an additional 5 minutes. Remove bay leaf.
