Ingredients/Components

  • olive oil - 2 Tbsp
  • salt to taste - 1 item
  • can black olives, cut in half - 1 item
  • carrots, peeled and sliced diagonally into 2-inch pieces - 2 lb
  • head garlic, cloves peeled and halved - 1 item

How to make carrots provencal:

In large skillet, heat oil over moderately high heat. When the oil is hot, add carrots, stir to coat carrots with oil and reduce to moderate heat. Cover and braise for 20 minutes, stirring regularly.

Add garlic, season and salt and continue cooking over low heat until carrots are almost caramelized and the garlic is soft, about 15 minutes. Add black olives and serve. Serves 6 to 8 people.
