Ingredients/Components

  • salt to taste - 1 item
  • butter or oil - 1 Tbsp
  • carrots, thinly sliced - 1 lb
  • dried tarragon leaves
  • white pepper or to taste - 1/4 tsp
  • defatted chicken stock - 5 c
  • white potatoes, quartered - 1/2 lb
  • medium leeks, thinly sliced - 3 item
  • large rib celery, thinly sliced - 1 item
  • finely chopped watercress to garnish - 1/4 c
  • a little dried hot pepper if desired - 1 item

How to make carrot soup:

Heat butter or oil in cooker. Saute leeks for 2 minutes. Add carrots, potatoes, celery, stock, tarragon, salt and pepper. Bring ingredients to boil. Cover and cook over medium heat until carrots are very soft (about 20 minutes). In blender or food mill, puree soup in batches. Return soup to cooker to reheat before serving. Garnish with watercress or tarragon (or parsley). Serves 6.
