Carrot soup
Ingredients/Components
- margarine - 2 Tbsp
- hot water - 6 chicken
- bay leaf - 1 item
- medium onion, chopped - 1 item
- carrots, sliced - 12 item
- thyme - 1 tsp
- black pepper to taste - 1 item
- potatoes, peeled and sliced - 2 item
- small cloves garlic, minced - 3 item
How to make carrot soup:
In soup pot, saute onion and garlic in margarine until soft. Stir in thyme. Mix in carrots, potatoes, bay leaf and pepper. Add chicken bouillon cubes and enough water to cover. Bring soup to a boil. Reduce heat, cover and simmer for 30 minutes. Remove bay leaf and puree soup in blender (small amount at a time). Serve hot or lukewarm.
