Carrot-raisin bread
Ingredients/Components
- cinnamon - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 4 c
- brown sugar
- butter - 1/2 c
- water
- baking soda - 1 Tbsp
- large eggs - 2 item
- shredded raw carrots - 2 c
- raisins golden - 2 c
How to make carrot-raisin bread:
Combine water, sugar, carrots, raisins, cinnamon and butter in a large saucepan. Bring to a boil, reduce heat and simmer for 20 minutes. Cool the mixture. When cooled, beat in the eggs. Sift the flour, soda and salt. Add to mixture and fold in chopped nuts. Turn into 2 buttered 8-inch loaf pans.
