  • cinnamon - 2 tsp
  • vanilla - 2 tsp
  • pkg - 8 oz
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour
  • almond extract - 1/2 tsp
  • baking soda - 1 tsp
  • large eggs - 4 item
  • cooking oil
  • stick butter or margarine - 1 item
  • crushed pineapple with juice - 1 c
  • grated carrots, packed - 2 c
  • Add carrots, nuts and pineapple

How to make carrot pineapple cake:

Blend cooking oil, sugar and eggs. Add carrots, nuts and pineapple. Mix in remaining ingredients. Bake at 350° for 35 to 40 minutes in a 12 x 13 x 2-inch pan. Frost with Cream Cheese Frosting (recipe follows).Cream Cheese Frosting:1 box 10x sugar2 tsp. vanilla8 oz. pkg. cream cheese1 stick butter or margarine Blend all ingredients together; add 1 teaspoon milk for spreading consistency if necessary.
