Carrot fritters
Ingredients/Components
- flour - 2 Tbsp
- beaten eggs - 2 item
- salt and pepper - 1 item
- parsley - 1 Tbsp
- small chopped onion - 1 item
- cup carrots, shredded - 1 item
- cup potato, shredded about 1 medium potato - 1 item
How to make carrot fritters:
Peel or scrape carrots, trimming both ends. Cut lengthwise into halves or in quarters, depending on size. Cook covered, in salted water with a teaspoon of sugar, until fork tender. Drain. Place in a baking dish and sprinkle with brown sugar* and bake in oven at 400° until nicely glazed, about 15 minutes. Serve.*You can substitute honey or marmalade for the brown sugar.
