  • milk - 1 Tbsp
  • oil - 3 Tbsp
  • beaten egg - 1 item
  • chopped onion - 1 Tbsp
  • fine bread crumbs - 3/4 c
  • parsley, snipped - 1 Tbsp
  • cooked brown rice - 2 c
  • cooked, mashed carrots - 1 c

How to make carrot cutlets:

Mix all ingredients, except bread crumbs and oil. Roll in crumbs and shape into cakes. Fry in hot oil. Serve hot.
