Carrot cookies

Ingredients/Components

• sugar
• eggs - 2 item
• vanilla
• salt - 1 tsp
• chopped nuts - 1 c
• flour
• baking powder
• shortening - 1 c
• cooked mashed carrots

How to make carrot cookies:

Cream shortening with sugar. Add eggs and carrots; mix well. Add dry ingredients and vanilla. Drop by spoon on cookie sheet. Bake at 350° for 10 to 12 minutes. Frost with white frosting.
