Ingredients/Components
- sugar - 3/4 c
- butter, softened - 1 c
- vanilla - 1 tsp
- egg - 1 item
- flour - 2 c
- baking powder - 1 tsp
- salt - 1/2 tsp
- finely shredded carrots - 1 c
- chopped walnuts optional - 1/2 c
- chopped raisins - 1/2 c
- powdered sugar
- grated orange peel - 2 tsp
- orange juice - 1 Tbsp
How to make carrot cookies:
Frosting:1 1/2 c. powdered sugar3 Tbsp. butter, softened2 tsp. grated orange peel1 Tbsp. orange juice Preheat oven to 350°. Cream sugar and butter until light and fluffy. Add vanilla and egg; beat well. Combine flour, baking powder and salt. Add by spoonfuls, mixing well. Stir in carrots, walnuts and raisins. Drop by teaspoonfuls 2 inches apart on ungreased cookie sheet. Bake at 350° for 8 to 12 minutes, until edges are golden brown.
