  • mayonnaise - 1 c
  • grated Cheddar cheese - 1/4 c
  • carrots, peeled and sliced
  • minced onion - 1 Tbsp
  • horseradish - 1 Tbsp
  • buttered bread crumbs - 2 Tbsp

How to make carrot casserole:

Cook carrots until crisp-tender. Drain, reserving 1/4 cup cooking liquid. Place carrots in a casserole. Combine mayonnaise, onion, horseradish and cooking liquid. Spread over carrots. Sprinkle with cheese and top with bread crumbs. Bake, uncovered, at 350° for 30 minutes.
