  • vanilla - 1 tsp
  • granulated sugar

  • salt - 1/2 tsp
  • chopped nuts - 3/4 c
  • soda - 2 tsp
  • confectioners sugar - 2 c
  • baking powder - 1 tsp
  • vegetable oil - 3/4 c
  • all-purpose flour - 2 c
  • large eggs - 4 item
  • coarsely grated peeled carrots - 3 c
  • lightly salted butter or oleo, at room temperature - 2 Tbsp

How to make carrot cake:

Cream Cheese Frosting:2 (3 oz.) pkg. cream cheese, at room temperature2 Tbsp. lightly salted butter or oleo, at room temperature2 c. confectioners sugar1 tsp. vanilla Heat oven to 350°. Grease and flour a 12-cup Bundt pan or loaf pan. Mix flour, sugar, baking soda, cinnamon, baking powder and salt in large bowl of mixer. Mix at low speed until well blended, scraping sides of bowl often. Mix in carrots and then pecans.

Pour batter into prepared pan and bake 50 to 60 minutes until a cake tester inserted in center of cake comes out clean. Put on wire rack and cool for 10 minutes. Turn out, and when completely cool, frost with Cream Cheese Frosting. Cake is best when made at least 1 day ahead. Yields 20 servings.
