Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- chopped pecans - 1/2 1
- pkg - 1 oz
- oil - 1 c
- self-rising flour - 2 c
- margarine
- box powdered sugar - 1 item
- grated carrots about 1 lb - 2 c
How to make carrot cake:
Frosting:2/3 c. margarine1 (8 oz.) pkg. cream cheese1 box powdered sugar1/2 to 1 c. chopped pecans2 tsp. vanilla Grease tube pan. Sift flour and cinnamon together. Mix oil and sugar thoroughly; add eggs and vanilla. Blend thoroughly; add dry ingredients alternately with carrots. Pour into pan and bake at 350° for 60 minutes.Frosting: Cream margarine and cheese together; add vanilla, sugar and nuts. Beat well and spread on cooled cake.
