  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • oil
  • soda
  • grated carrots - 2 c
  • baking powder - 2 tsp
  • powdered sugar - 1 lb
  • pineapple juice - 1 item
  • drained, crushed pineapple - 1 c
  • Beat in eggs; add carrots, pineapple and nuts

How to make carrot cake:

Sift dry ingredients and spices; add sugar and oil, mixing well. Beat in eggs; add carrots, pineapple and nuts. Bake in three 10-inch round layer pans. Bake at 350° for 30 minutes.Frosting:1/2 stick butter (1/4 c.)1 (8 oz.) pkg. cream cheese1 lb
