- baking powder - 1 tsp
- baking soda
- can crushed pineapple - 1 oz
- powdered sugar - 1 c
- carrots - 2 c
- chopped nuts walnuts - 1/4 c
How to make carrot cake:
Cream Cheese Icing:1/2 c. butter1 c. powdered sugar1/4 c. chopped nuts (walnuts)1 (8 oz.) cream cheese1 tsp. vanilla Sift flour, baking powder, baking soda, cinnamon and salt. In large bowl mix oil, sugar and eggs, one at a time, beating well with oil and sugar. Add flour mixture until well blended. Add grated carrots and mix well with rest of ingredients. Finally add crushed pineapple. Bake in well-greased tube pan at 350° for 45 to 60 minutes.Cream Cheese Icing: Cream well butter and cream cheese. Slowly mix powdered sugar and then teaspoon of vanilla and chopped nuts. Frost cake.
