Ingredients/Components

- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg
- salt - 1/2 tsp
- grated carrots - 2 c
- baking soda - 2 tsp
- stick butter, melted - 1/2 item
- cooking oil
- plain flour - 2 c
- lemon extract - 1/2 tsp
- nuts, chopped optional - 1 c
- box confectioners sugar, sifted - 1 oz
How to make carrot cake:
Cream Cheese Icing:1 (8 oz.) pkg. cream cheese1 (16 oz.) box confectioners sugar, sifted1 tsp. vanilla1/2 stick butter, melted1/2 tsp. lemon extract1 c. nuts, chopped (optional) Cake: Sift dry ingredients together. Beat eggs slightly; add sugar and beat until fluffy. Add oil gradually; add dry ingredients. Add carrots and blend well. If desired, some chopped nuts may be added to the batter. Pour into 2 (9-inch) greased and floured cake pans. Bake at 350° for 30 to 40 minutes or until done. Frost with Cream Cheese Icing.Icing: Cream cheese until fluffy; gradually add sugar, alternating with cool, melted butter. Add extracts.
