  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • milk
  • salt - 1 tsp
  • flour - 2 c
  • oil
  • baking powder - 2 tsp
  • baking soda
  • powdered sugar
  • raisins - 1 c
  • margarine - 1/4 c
  • Preheat oven to 350°
  • raw grated carrots - 3 c

How to make carrot cake:

Grease and flour a 9 x 13-inch pan. Preheat oven to 350°. Mix together the flour, baking powder, baking soda, salt and cinnamon. Add oil, sugar and eggs; mix well. Fold in carrots and raisins. Bake for 30 to 45 minutes. Allow to cool before frosting.Frosting:1 1/2 oz. cream cheese1/4 c. margarine1 3/4 c. powdered sugar1 tsp. vanilla1 1/2 tsp. milk Cream together the cream cheese and margarine. Add vanilla, then add powdered sugar. Alternate with milk until spreading consistency.
