  • sugar
  • cinnamon - 1 Tbsp
  • salt - 1/2 tsp
  • chopped nuts - 1 c
  • flour
  • water
  • nutmeg - 1 Tbsp
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • raisins - 1 c
  • margarine - 1 Tbsp
  • cloves - 1 Tbsp
  • large carrots, grated - 2 item

How to make carrot cake:

Preheat oven to 275°. In a large saucepan, put the sugar, water, raisins, margarine, carrots and spices. Bring to a boil and simmer for 5 minutes. Cover the pan and let it stand for 12 hours.

The next day, add the dry ingredients all at once and mix well. Pour into a greased loaf pan and bake for 2 hours. Cool completely before removing from pan.
