Ingredients/Components

  • sugar
  • cinnamon - 1/2 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • milk - 1/2 c
  • stick margarine - 1 item
  • nutmeg - 1/2 tsp
  • confectioners sugar
  • self-rising flour - 3 c
  • shredded carrots - 1 c
  • mashed Irish potato - 3/4 c

How to make carrot cake:

Topping:1 c. confectioners sugar2 tsp. milk Preheat oven to 300°. Melt butter. Mix with eggs, potatoes, sugar, milk and spices. Then add the remaining ingredients, except the carrots. Stir in carrots last. Bake in round tube pan for 45 minutes to an hour. Remove from oven and cool. Add topping and serve.

Topping: Mix ingredients together and microwave until boiling. Pour over cake when cooled.
