  • sugar - 2 c
  • cinnamon - 1 tsp
  • vanilla - 1 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour - 3 c
  • soda - 2 tsp
  • grated carrots - 3 c
  • eggs, beaten - 4 item
  • baking powder - 2 tsp
  • vegetable oil
  • cherries optional - 20 item

How to make carrot cake:

Set aside grated carrots, cherries and nuts. Combine dry ingredients and sift into a large bowl. Add oil, carrots and vanilla; stir by hand until well done, then beat for 3 minutes. Add nuts and cherries. Bake in greased and floured angel cake pan for 1 1/4 hours.
