Ingredients/Components
- eggs - 4 item
- sugar - 2 c
- flour - 3 c
- baking powder - 2 tsp
- baking soda - 2 tsp
- cinnamon - 2 tsp
- salt - 1/2 tsp
- jars baby junior carrots - 2 item
- vegetable oil
- milk - 1/2 c
- shortening - 1/4 c
- butter - 1/4 c
- vanilla - 1 tsp
How to make carrot cake:
Frosting:2 1/2 Tbsp. flour1/2 c. milk1/4 c. shortening1/4 c. butter1/2 c. sugar1 tsp. vanilla Beat the eggs and sugar together. Sift the dry ingredients and add to eggs along with the carrots and oil. Pour into a Bundt or 10 x 12-inch pan. Bake at 350° for 55 to 60 minutes.Optional: May add 1 cup of coconut and 1/2 cup chopped nuts.
Frosting: Mix the flour with the milk. Cook and stir until it forms a paste. Cool. Cream the shortening, butter, sugar and vanilla. Add cooled paste and beat for 5 minutes. May be doubled. Keep refrigerated.
