  • oil
  • sugar - 2 c
  • egg yolks beat separately first - 4 item
  • grated carrot - 2 c
  • hot water - 4 Tbsp
  • chopped nuts - 1/2 c
  • cinnamon
  • flour
  • nutmeg
  • baking soda
  • salt - 1/2 tsp
  • egg whites beaten until stiff - 4 item
  • Mix carrots and water; add to mixture
  • powdered sugar - 1 lb
  • soft butter - 1/4 lb
  • vanilla - 1 tsp

How to make carrot cake:

Mix oil and sugar; add egg yolks. Mix carrots and water; add to mixture. Sift flour with cinnamon, nutmeg, baking soda and salt; add to mixture. Add nuts. Fold in beaten egg whites. Pour in greased and floured 13 x 9-inch pan. Bake 1 1/2 hours at 35
